¾ cup granulated sugar
½ cup light brown sugar
1 egg, plus 1 yolk

1 tsp cream of tartar
½ tsp kosher salt

1 Tbsp cinnamon

1. Instructions
2. Preheat oven to 325°
3. Line a baking sheet with a silicone mat or parchment paper, set aside.
4. In bowl of stand mixer beat butter and both sugars until light and fluffy, 2-3 minutes. With mixer on medium speed add in egg, yolk and vanilla and beat for another minute, scraping the sides as necessary.
5. Turn mixer to medium low and mix in baking soda, cream of tartar, salt and 1 tsp cinnamon. Mix for 30 seconds, scraping sides as necessary.
6. Turn mixer to low and add in flour, mixing until just combined.
In a separate small bowl make your Cinnamon Sugar by mixing together cinnamon and sugar, stirring until evenly combined.
7. Using a cookie scoop or spoon, measure out about 2 Tbsp of dough and roll into a ball. Then roll each cookie dough ball into the Cinnamon Sugar mixture.
8. Place on prepared baking sheet about 2 inches apart. Bake for 10-12 minutes, turning cookie sheet halfway through baking.

*I baked mine for exactly 10 minutes every time I make these cookies with perfect results, but I know ovens vary, so bake only until the edges are slightly golden. The tops may seem slightly undercooked, but they will firm up perfectly when they cool. If you prefer a crisper cookie, bake for 2 additional minutes.

1 cup creamy peanut butter

Mapledoodles

Preheat to 375
Line baking sheet with parchment
1/3 cup softened butter
2/3 cup pure maple syrup
3/4 t. baking soda
1/2 t. cream of tartar
1/4 t. salt
1 egg
1 1/2 cups AP flour

cinnamon sugar:
1 T. sugar
1/2 t. ground cinnamon

Beat butter on medium high for approx 30 seconds, until fluffy.
Add maple syrup, baking soda, cream of tartar and salt. Beat on medium until combined scraping sides of bowl.
Add your egg and and mix until incorporated.
Add flour slowly, on low until just combined.
Now, your dough will be sticky because of the syrup, so drop by rounded teaspoon into cinnamon sugar and roll until coated. If you don't want to do this, drop by rounded teaspoon onto baking sheet and sprinkle with cinnamon sugar.
The only difference is the amount of cin-sugar that will be on your cookie. If you prefer less, then sprinkle, more, then roll.

Bake for 8-10 min until edges are just golden and firm.

Cool on wire rack.
Makes approx 25 cookies

For glaze (optional):
1 1/4 sifted powdered sugar

1 t. vanilla extract

1/3 cup pure maple syrup.

When cookies are almost cooled add a teaspoon sized dollop of glaze to each.
Let the glaze set and enjoy!!

Pumpkin Spice Kiss Cookies

Posted by: Shan in

I remember last year around Christmas mom kept asking me if I had tasted these new Hershey Kisses. Well I hadn't but I just found this recipe at Picky Palate and she will love them. Now I just have to wait for the candy to come back in season. lol

Pumpkin Spice Kiss Cookies

1 Spice Cake Mix 18.25 oz

14 oz can Libby’s Pumkin

½ Cup sanding sugar

1 bag Hershey’s Pumpkin Spice Kisses

1. Preheat oven to 350 degrees F. In a stand or electric mixer beat the cake mix and pumpkin until well combined, about 45 seconds. With a cookie scoop, scoop dough and roll top half in sanding sugar (dough is sticky) then place onto a parchment or silpat lined baking sheet. Bake for 11-13 minutes, or until cooked through. Quickly transfer to a cooling rack and immediately press kisses into the center of each cookie. I immediately place cooling rack into the fridge for 15 minutes so the kisses don’t melt. I tried both ways and it melts down if just left at room temperature. Enjoy!

1 Cup creamy peanut butter

1 large egg

1. Preheat oven to 350 degrees F. In a large bowl mix the peanut butter and egg until well combined. Slowly stir in the marshmallow cream until just combined. You want to see the marshmallow cream not fully incorporated, almost like swirled through. With a cookie scoop, scoop dough onto a parchment or silpat lined baking sheet. Bake for 12-15 minutes or until baked through. Let cool for 5 minutes on cookie sheet before transferring to a cooling rack. Definitely grab some milk with these bad boys and Enjoy!!
